Expecting better things of  Spain, I put them on day 22 of our World Cup menu plan. This recipe takes about three minutes to make –– about as long as it took Spain to crash out of the World Cup…;-)

Nova has never liked gazpacho much, which dragged the family score down considerably.

Gazpacho
(makes 4 to 6 servings)

  •  1 red pepper, cut in pieces
  • 1/2 medium cucumber, cut in pieces
  • 1 red onion, quartered
  • 2 cloves garlic, peeled
  • 2x 400g tins whole tomatoes
  • 4 Tb olive oil
  • 2 Tb white wine vinegar
  • salt and pepper
  • avocado, croutons to garnish (optional)
  1. Combine all ingredients (except the avocado and croutons) in a blender, and blitz until smooth.
  2. Stir in a cup of cold water, and chill for at least two hours before serving.
  3. Garnish with chopped avocado or croutons if you want. I fry cubes of stale bread in olive oil for a few minutes and season with a bit of salt.
