Balinese chicken skewers

I can’t recall where I found this recipe for Balinese chicken skewers, and never having been to Bali I can’t vouch for its authenticity. But I can confirm that it’s dead easy, extremely tasty, and a great hit with the girls. Lyra has already requested it for her birthday dinner (next March).

Balinese chicken skewers
(makes 8 skewers)

  • 12 boneless, skinless chicken thigh fillets
  • 2 shallots, chopped
  • 3 Tb tomato purée
  • 1 Tb sambal oelek
  • 1 1/2 Tb kekap manis (or soy sauce plus a pinch of sugar)
  • 1 1/2 tsp ground allspice
  • 1/2 tsp turmeric
  • 1 1/2 Tb fish sauce
  • 8 bamboo skewers, soaked for at least half an hour
  1. Cut each chicken fillet into several chunks.
  2. Combine the shallots, tomato purée, sambal oelek, kekap manis, allspice, turmeric and fish sauce in a mini chopper and blend to a paste.
  3. Mix the meat and paste together and leave to marinate for a few hours (or overnight).
  4. Thread the meat onto skewers and grill, turning occasionally, until cooked through.
