I can’t recall where I found this recipe for Balinese chicken skewers, and never having been to Bali I can’t vouch for its authenticity. But I can confirm that it’s dead easy, extremely tasty, and a great hit with the girls. Lyra has already requested it for her birthday dinner (next March).
Balinese chicken skewers
(makes 8 skewers)
- 12 boneless, skinless chicken thigh fillets
- 2 shallots, chopped
- 3 Tb tomato purée
- 1 Tb sambal oelek
- 1 1/2 Tb kekap manis (or soy sauce plus a pinch of sugar)
- 1 1/2 tsp ground allspice
- 1/2 tsp turmeric
- 1 1/2 Tb fish sauce
- 8 bamboo skewers, soaked for at least half an hour
- Cut each chicken fillet into several chunks.
- Combine the shallots, tomato purée, sambal oelek, kekap manis, allspice, turmeric and fish sauce in a mini chopper and blend to a paste.
- Mix the meat and paste together and leave to marinate for a few hours (or overnight).
- Thread the meat onto skewers and grill, turning occasionally, until cooked through.
Ooooh, looks good! These are just like Indonesian satay chicken! 🙂
