Tarator is a chilled yogurt and cucumber soup that is eaten throughout the Balkans. Apparently, it’s considered to be hangover cure, though I’ve yet to test that claim.
It’s very refreshing, and dead easy to make. I’d happily have a jug of tarator in the fridge for quick lunches on hot summer days.
Not that we’re overburdened with those in the UK… It’s probably best to make your tarator on the day and hope the thermometer hasn’t plunged by the time you were planning to serve it…;-)
Tarator (cold cucumber and yogurt soup)
(serves 4)
- 2 English cucumbers, peeled and grated
- 1 clove garlic, crushed
- 500g tub of Greek yogurt
- cold water
- salt to taste
- olive oil
- chopped fresh dill and chopped walnuts, to serve
- In a large bowl, combine the cucumbers, garlic, and yogurt.
- Thin with cold water until it reaches a soup-like consistency.
- Season to taste with salt, and chill for a few hours.
- Serve, drizzled with olive oil and topped with chopped dill and walnuts.

Beautiful soup! We have a very similar dish in Iran. It’s a great cold soup for hot days and they add pieces of toasted pita bread to it right before serving it.
I like the sound of that – croutons would definitely be a good addition.
