I served this simple Croatian cucumber salad to accompany the prawns alla busara we had for dinner last night. The recipe seemed so simple, I hadn’t intended to post it.
But it was so crisp, cool and refreshing that I changed my mind.
Croatian cucumber salad
- half a large cucumber, thinly sliced
- 1 clove garlic, minced
- 1 Tb white wine vinegar
- 1 Tb olive oil
- 3 Tb water
- salt and pepper
- chilli flakes (optional)
- Toss the cucumber slices with the garlic, vinegar, olive oil and water.
- Season with salt, pepper and chilli flakes (if desired), and toss again.
- Chill for at least half an hour before serving.
Sounds like a grand use for my abundance of cucumbers. And I like the make ahead part of it.
Seemed to improve with a bit of chilling time as well
