Kimchi and cheese probably seems an odd combination to most people.
Even today, I doubt the average Korean family eats much cheese, and kimchi is hardly a store cupboard staple in Britain (though it certainly is in this British home).
But in this global world, these two unlikely ingredients have met and fallen in love. Kimcheeze anyone? Sorry…
In an attempt to raise the tone, I quote the famous gastronome Jean-Anthelme Brillat-Savarin:
The discovery of a new dish does more for the happiness of the human race than the discovery of a star.
Kimchi grilled cheese sandwich
(serves 1)
- 2 slices bread
- butter, soft enough to spread easily
- 1/4″-thick slices of cheese: cheddar, red leicester, gruyère
- 1/4 cup kimchi
- Heat a frying pan over a low flame.
- Squeeze any excess liquid from the kimchi and chop roughly.
- Lie the bread on a cutting board. Arrange half the cheese slices in a single layer on one slice.
- Top with chopped kimchi, then cover with the remaining cheese slices.
- Place the other piece of bread on top to make a sandwich. Butter the top slice generously.
- Carefully transfer the sandwich, butter side down, into the frying pan. Butter the top side.
- Cook the sandwich slowly until the underside is crisp, pressing it down occasionally with a spatula to help it cook evenly and stick together.
- Flip the sandwich and carefully cook the other side.
- Remove from the heat, cut and serve.
