On Sundays, we generally have a cooked breakfast (though it’s often noon by the time we sit down to eat it).
It’s often a full-on fry-up, heuvos rancheros, eggs benedict, or a homestyle egg McMuffin. But over the last year, these breakfast burritos have shouldered their way into the rotation.
Having experimented with different fillings and methods, I’ve pretty much settled on the version below: spicy hash brown potatoes topped with a fried egg all wrapped snugly in a warmed flour tortilla.
Breakfast burrito
(makes 4)
- sunflower oil
- 1 medium onion, diced
- 50g diced chorizo (optional)
- 4-5 medium potatoes, cooked and diced (about 4 cups)
- 1 Tb chipotle paste
- salt and pepper
- 4 eggs
- 4 large flour tortillas (or wraps)
- 2 Tb fresh coriander, chopped
- hot sauce, to serve
- Heat 2 Tb of oil in a large frying pan over a medium flame. Add the onion, and cook until softened.
- Add the chorizo (if using), and cook until the fat is rendered.
- Add the potatoes, tossing to coat in the oil. Stir in the chipotle paste, and season with salt and pepper.
- Cook the potatoes for about ten minutes, stirring occasionally, until they are golden and starting to crisp. (Add a bit more oil if they begin to stick).
- When the potatoes are about ready, heat another Tb of oil in another frying pan over a medium-high flame. Turn the grill to high.
- Fry the eggs while also warming the tortillas under the grill. (I do two tortillas at a time, for about 30 seconds each side.)
- Spread a portion of potatoes into a flat rectangle in the centre of each tortilla. Top with a fried egg and some fresh coriander.
- Fold the bottom of the tortilla over the filling, then fold in the two sides, leaving the top open.

A house favorite, especially called into service for housefulls of company as I can prepare them ahead and freeze. Mind you, mine use scrambled rather than fried egg, which we prefer.
We’ve tried scrambled, also tried adding eggs to the potatoes to produce a sort of scrambly tortilla. All tasty, but the family vote was for fried, with yolk just past the point of being runny.
Is there a better breakfast idea, than a breakfast burrito!? 😀
