Greek salad

When Lyra asked me what meal I would choose if I had to eat it every single day for the rest of my life, I picked Greek salad. As it is, definitely eat it at least once a week.

Greek salad
(makes 2 large servings)

  • 2 or 3 ripe tomatoes , chopped into large chunks
    (or several cherry tomatoes, halved)
  • 1 red pepper, chopped into large chunks
  • 1/2 a cucumber, chopped into large chunks
  • 1/2 a red onion, chopped into less large chunks
  • a handful of  kalamata olives
  • 50 g feta cheese
  • juice of half a lemon
  • 2 Tb olive oil
  • 1/2 tsp dried oregano
  • Maldon salt and freshly ground pepper
  1. In a large bowl, mix together the tomatoes, red pepper, onion and olives.
  2. Crumble the feta into the salad with your fingers (if you do this instead of chopping it, it mixes into the dressing in a very satisfying way).
  3. Dress with the lemon juice, olive oil, oregano, salt and pepper and toss well.
