This Colombian recipe was dead simple to make – in fact, Lyra did most of it. I found it on the My Colombian Recipes website.
Lime-lemon bars (Barras de limón)
(makes 15)
Crust
- 2 cups graham cracker crumbs (I used digestive biscuits)
- 6 Tb butter, melted
- 1/4 cup brown sugar
- zest of one lime
Topping
- 2 egg yolks
- 405 g (14 oz) tin light condensed milk
- juice of one lemon
- zest of one lime
- juice of two limes
- Preheat oven to 350° F.
- Butter a 9 x 12 inch pan.
- To make the crust, combine the crumbs, butter, sugar and lime zest.
- Press into the pan and bake for seven minutes. Allow to cool completely.
- Meanwhile, make the filling. Pour the condensed milk into a bowl and beat on medium speed for a couple of minutes. Add the egg yolks, lemon juice, lime juice and zest, and beat until smooth.
- Pour the filling over the cooled crust, and bake for about 15 minutes, or until just set.
- Cool to room temperature on a wire rack, then refrigerate for at least two hours before cutting into bars with a sharp knife.
