I was undecided whether to call name this dish prawn satay, but eventually decided against it. Strictly speaking, I think that satay are grilled skewers served with a peanut sauce on the side.
This is a nice way of doing things too, and threading the prawns onto two skewers keeps them flat for grilling and helps prevent the peanut sauce sliding off.
I serve these skewers with a big green salad and a bowl of steamed rice.
Grilled prawns in peanut sauce
(serves 2)
- 1/4 cup peanut butter
- juice of 1 lime
- 1 red chilli, chopped
- 1 tsp honey
- 2 Tb soy sauce
- 2 tsp sesame seeds
- 250g raw prawns
- Blend the peanut butter, lime juice, chilli, honey, soy sauce and sesame seeds in a food processor until smooth.
- Thread the prawns onto bamboo skewers. (I like to use a pair of skewers so that the prawns will lie flat.)
- Heat the grill or broiler to high.
- Slather one side of the skewers with peanut sauce and grill for a few minutes.
- Turn the skewers carefully, and spread with the remaining peanut sauce.
- Grill for a few more minutes until cooked through. Serve with a green salad.
