Grilled prawns in peanut sauce

Satay prawns

I was undecided whether to call name this dish prawn satay, but eventually decided against it. Strictly speaking, I think that satay are grilled skewers served with a peanut sauce on the side.

This is a nice way of doing things too, and threading the prawns onto two skewers keeps them flat for grilling and helps prevent the peanut sauce sliding off.

I serve these skewers with a big green salad and a bowl of steamed rice.

Grilled prawns in peanut sauce
(serves 2)

  • 1/4 cup peanut butter
  • juice of 1 lime
  • 1 red chilli, chopped
  • 1 tsp honey
  • 2 Tb soy sauce
  • 2 tsp sesame seeds
  • 250g raw prawns
  1. Blend the peanut butter, lime juice, chilli, honey, soy sauce and sesame seeds in a food processor until smooth.
  2. Thread the prawns onto bamboo skewers. (I like to use a pair of skewers so that the prawns will lie flat.)
  3. Heat the grill or broiler to high.
  4. Slather one side of the skewers with peanut sauce and grill for a few minutes.
  5. Turn the skewers carefully, and spread with the remaining peanut sauce.
  6. Grill for a few more minutes until cooked through. Serve with a green salad.
