Red cabbage and herb salad

This quick cabbage and carrot salad is a pared-back, vegetarian take on goi ga (Vietnamese chicken salad). It’s a nice accompaniment to a piece of simply grilled fish or chicken.

Red cabbage, carrot and herb salad
(serves 4)

  • 4 carrots, cut into thin sticks or grated
  • 1/2 a small red cabbage, finely shredded
  • 1 red onion, finely sliced
  • a handful of mint leaves
  • a handful of coriander leaves
  • 2 Tb roasted peanuts, chopped

For the dressing

  • juice of 2 limes
  • 1 Tb peanut oil
  • 1 red chilli, seeded and finely chopped
  • 1 TbĀ  brown sugar
