This quick cabbage and carrot salad is a pared-back, vegetarian take on goi ga (Vietnamese chicken salad). It’s a nice accompaniment to a piece of simply grilled fish or chicken.
Red cabbage, carrot and herb salad
(serves 4)
- 4 carrots, cut into thin sticks or grated
- 1/2 a small red cabbage, finely shredded
- 1 red onion, finely sliced
- a handful of mint leaves
- a handful of coriander leaves
- 2 Tb roasted peanuts, chopped
For the dressing
- juice of 2 limes
- 1 Tb peanut oil
- 1 red chilli, seeded and finely chopped
- 1 TbĀ brown sugar
