Roasted pumpkin seeds

Along with pumpkin soup, roasted pumpkin seeds are a Halloween night staple. As soon as we’ve scooped out the pumpkins for the jack-o-lanterns, I get digging through the slippery pumpkin innards to collect the seeds.

Tossed with oil and seasoning then roasted in the oven, pumpkin seeds are great to snack on while carving the jack-o-lantern. They are also almost certainly the healthiest thing the kids will eat all day.

Roasted pumpkin seeds

  • pumpkin seeds
  • sunflower oil
  • salt
  • other seasonings, (like chilli, garlic powder, ground cumin, or curry) optional
  1. Collect the seeds scraped out the pumpkin you’re using to make the jack-o-lantern.
  2. Pick off any pumpkin flesh clinging to the seeds (though a few strings here and there don’t matter).
  3. Preheat the oven to 350°F (180°C).
  4. Drizzle the seeds with oil and toss to coat.
  5. Spread the pumpkin seeds in a single layer on a baking sheet lined with baking parchment. Sprinkle with salt (and any other seasonings you want to add
  6. Bake for 10-15 minutes, or until the seeds are golden brown.
