What I knew as fruit pizza growing up I recognise to be a pretty standard fruit tart.
Maybe it’s because the biscuit base was cooked in a pizza pan? The sweetened cream cheese we spread on top? Or the thinly sliced toppings (kiwi, grapes and berries rather than pepperoni, mushrooms and olives)?
Whatever the reason, fruit pizza it was – is – and shall remain.
Fruit pizza
For the crust:
- 2 cups plain flour
- 1/2 cup brown sugar
- 1/4 cup icing sugar
- 1 cup butter, softened
For the topping:
- 375g (12 oz) cream cheese
- 1/4 cup icing sugar
- 1/2 tsp vanilla (or orange blossom water)
- sliced fruit: nectarines, kiwi, grapes, strawberries, blueberries etc
For the glaze:
- 1/4 cup apricot jam
- 1 tsp water
- Preheat the oven to 350°F (175°C).
- First, make the the crust. Mix together the flour, brown sugar, icing sugar and butter until it forms a ball.
- Lightly press the dough into a round pizza pan or tart tin.
- Bake for 10-15 minutes, or until golden and firm. Set aside to cool.
- In another bowl, whisk together the cream cheese, icing sugar and vanilla. Spread over the cooled crust.
- Arrange the sliced fruit and berries on top.
- To make the glaze, heat the jam and water in a microwave (or small pot) until liquid.
- Using a pastry brush, spread the glaze over the fruit.

I love fruit pizza. I made this so many times years ago, but have not made in quite a while. Yours looks amazing! 🙂
Thank you! I’d got out of the habit of making them as well. Now making up for lost time…:)
Sounds interesting!
