This is the potato salad I grew up eating. A sunshine-yellow mixture of potatoes and hard-boiled eggs, tangy with mustard and thick enough to spackle a wall.
The kind of potato salad that was served with a scoop and landed with a thud, compromising your precariously loaded paper plate. The potato salad of every barbeque, picnic and potluck dinner I ever attended.
Until I left home, I was unaware other types of potato salad even existed. Once I found out, I made up for lost time. It was all French potato salad, rosolli and salad olivieh around here.
The other day, I found myself craving the potato salad of my childhood. Not having French’s mustard to hand, I went with Colman’s. The colour wasn’t quite as lurid, but the taste and texture hit all the right notes.
To my surprise, both girls loved it. “This is the best potato salad you have ever made!” one said reproachfully. “Why haven’t you made it for us before?”
My little English girls may be more Canadian than I thought…;-)
Mum’s potato salad
- 500g potatoes
- 4 eggs
- 1/4 cup mayonnaise
- 1-2 Tb French’s mustard (or Colman’s or dijon)
- a splash of white vinegar to loosen it a bit, if desired
- salt and pepper
- chives, to garnish
- Boil the potatoes until just tender. Drain and set aside until cool enough to handle. Peel and cut into cubes.
- Hard boil the eggs. Peel and dice.
- In a serving bowl, toss together the potatoes, eggs, mayonnaise, mustard, salt and pepper until thoroughly mixed.
- Allow it to rest in the fridge for at least 30 minutes before serving. Garnish with chives.
