With its sweet and sour dressing, krompir salata is a departure from our go-to potato salads – French potato salad and mum’s potato salad.
I made it to accompany these outsized Serbian hamburgers in our World Cup 2018 cook-off.
Roasted peppers from a jar worked well here. The recipe is adapted from this one on the Spruce Eats website.
Krompir salata (Serbian potato salad)
(serves 4)
- 5-6 large potatoes
- 4 green onions, sliced thinly crosswise
- 1 roasted red pepper, diced
- 2 Tb white wine vinegar
- 1 clove garlic, minced
- 1 tsp salt
- 2 tsp sugar
- ¼ tsp black pepper
- ¼ cup sunflower oil
- Boil the potatoes in salted water. Drain, peel and cube.
- In a serving bowl, mix together the potatoes, green onions and red pepper.
- In a small bowl, whisk together the vinegar, garlic, salt, sugar, pepper and sunflower oil.
- Adjust the balance of salt, sugar and vinegar to suit your taste.
- Toss the dressing with the salad, and leave for a few hours for the flavours to marry before serving.
